Cactus pads, or nopales, or prickly pear cactus, are a good source of fiber, beta carotene, iron, vitamin C, other antioxidants, and calcium. The use of nopal as a food extends back to around 9000 years ago.

Notes
Cactus pads are found natively in the southwestern regions of the United States and in Mexico. The flat cactus pads can be eaten when the plant is young. To prepare them, first trim off the perimeter and any blemished areas. Then use a peeler or knife to peel of the bumps and thorns the same way you'd peel another vegetable. Then grill or roast or sear!
