Notes

Many recipes use artichoke hearts. To extract the heart, first cook the artichoke by roasting, steaming, or boiling. Then cut off the top and remove the outer leaves, then carefully scoop out the fuzzy choke with a spoon. Then discard the fuzzy part and you will be left with the artichoke heart. You can dip the outer leaves in a sauce and scrape off the fleshy part with your teeth. This vegetable can look intimidating. Fear not!! You go for it!
